Hummus wrap – A quick, easy lunch
Coming up with quick, easy vegan lunch ideas has been one of my biggest challenges. Salads are always a good idea for lunch, but then there are those days when I just want something different. This hummus wrap is one of my favorites—I never get tired of it. You can try different veggie combinations to keep it interesting, and for days when you’re not in a hummus mood, this same approach works with healthy (no-oil) refried beans.
2 tablespoons of your favorite hummus
Chopped red pepper
Chopped green onions
Mixed baby greens
Chopped red cabbage
- Warm your tortilla by covering it with a damp paper towel and microwaving for 30 seconds
- Add a spoonful or two of hummus
- Add your chopped veggies and greens. Be creative—you can use whatever veggies you like.
- Roll up and enjoy!
- Finish your lunch with an apple, and you’ll feel nourished all afternoon.
