It’s been hectic around here the last few weeks, so I’ve looked for quick, easy recipes and relied on prepared foods a little more than usual. I’ve included links to some items below on Amazon for those of you who don’t live near a store that carries them, but if you have a local Whole Foods you should be able to find these there. Safeway carries most of the Lundberg products too.
I discovered that Lundberg offers a nice list of gluten-free products (http://www.lundberg.com/Products/Special_diets/Glutenfree.aspx). For an easy dinner, try the Lundberg Creamy Parmesan Risotto, with sauteed crimini mushrooms and onions. Before serving, stir in some chopped fresh spinach and chopped green onions. If you’re a meat eater, you can add some cooked chicken for protein. Serve with a green salad. It’s a delicious dinner!
I also found this wonderful Vegan Apple Oat Protein Muffin from Running on Real Food. For the flour, I use King Arthur All-Purpose Gluten-Free Flour. Whenever you bake, put a few in the freezer for a quick breakfast or snack on busy days. These muffins are great with fresh berries.
One of my favorite gluten-free recipes is this Sweet Potato Chickpea Buddha Bowl from Minimalist Baker. This was so good, and we already had most of the ingredients on hand. This has become my go-to base recipe for vegan bowls. When in doubt use this as a starting place and switch up the veggies and protein.
Another good quick dinner choice is a big salad – we eat a lot of salad around here. Use dark leafy greens and add lots of your favorite chopped veggies – chickpeas are a good protein add-in. Dress it with a light oil-free vinaigrette and you’ve got a healthy dinner.
