A wonderful cooling salad for a summer evening. The recipe was created by my son, Josh Gray, who is one of those incredibly talented people who are skilled at cooking absolutely anything well.
Cool Cucumber Salad
3 cucumbers – sliced
1/2 red onion, cut into slivers
6 cherry tomatoes, halved
1 tsp. chopped fresh dill
2 tbsp. rice vinegar
1 tsp ginger juice
juice of 1/2 lime
1/2 tbsp. maple syrup
- Combine cucumber slices, red onion, cherry tomatoes and dill in a bowl.
- Whisk together the rice vinegar, ginger juice, lime juice, and maple syrup.
- Pour dressing over vegetables and toss to coat.
- Season with a little pepper.
- Serve with baby greens.
